Wine Profile / Tasting Notes
Made entirely of native grape Corvinone, this lovely sparkler opens with forest aromas, wild roses, red berries and a whiff of bread dough. The savory, excellent palate doles out red cherry, pomegranate, dried herb and a hint of hazelnut. Bright acidity and a refined, elegant perlage.
Vineyard Notes
Vineyard location: East Lake Garda area. SOIL TYPE: Morainic limey soils. TRAINING SYSTEM: Pergola Veronese and Guyot.
Production Notes
The grapes are left to cold macerate for 12 to 15 hours. The grapes are then pressed without any oxygen and at a pressure of 0.3 bars. A first fermentation is carried out in inox steel vats for about 10 days at a controlled temperature of 15° C. The wine is left here for a period of 4 to 5 months. Following tartaric and protein stabilization, the wine is prepared for the second fermentation in the bottle where it is left on the lees for 24-36 months until degorgement. The wine is released 60-90 days after degorgement. Can be cellared for 5 to 7 years.
Winemaker Notes
This wine is the result of a friendly challenge. Chatting with family friend Roberto over a glass of this Brut, the conversation turned to memories of a sparkling rose wine that Roberto’s father used to make for private consumption. Natalino, who had always wanted to make a traditional method rose wine from the local variety Corvinone, took up the challenge and this is the result.
Food & Wine Pairing
Ideal as an aperitif, Creaman Brut Rose pairs well with starters, fried dishes and raw fish. It is also perfect with light vegetable based dishes and shellfish. SERVING TEMPERTURE: 6-8°C
