Wine Profile / Tasting Notes
Colour: deep ruby red
Nose: aroma of sweet spices and small red fruits tending towards preserve
Palate: soft and with a slightly tannins under- score. Harmonious
Soil: clay-limestone soil at 160 meters above sea level. South-western exposure. Climate: mediterranean,limited rainfalls du- ring the winters; sunny and windy summers. Average age of the vineyard: 30 years Training system: espaliered bushes. Implantation density of 5000 plants per ha and production of 35-40 quintals Harvesting: by hand, in small baskets of 10 kg each ones and grapes selection in the wine cellar. Second decade of October.
Maceration at controlled temperature and following alcoholic maceration at 24¡ C. The malolactic mace- ration occurs in small oak vats, where the wine completes its refinement cycle during the following 12 months.
