Wine Profile / Tasting Notes
The wine made from Falanghina is pale yellow in colour tending to gold with intense and fruity perfume. It shows a good soft taste and a pleasant savour persistence.
Floral and fruity with Mediterranean hints.
Production Notes
After a Manual harvest and careful selection, the grapes undergo a soft pressing to avoid skin break and then extraction of bitter polyphenols.
The must is cleaned with a static decantation that last 24/48 hours at 10°C. After that the fermentation takes place for about 25 days at a controlled temperature of 13/15 °C.
Refined on the lees for 2 months in steel with continuous batonnage (every 15 days).
Winemaker Notes
Falanghina is a vine that has probably very ancient origin. It seems that was already cultivated by the Romans.
Currently is widespread in Campania and in particular in the Sannio area.
Food & Wine Pairing
Seafood is Falanghina's best friend. The medium acidity and dry sweetness perfectly complement seafood flavors like scallops, clams, shrimp, or shellfish. Tomatoes pair nicely with Falanghina, such as tomatoes baked with marjoram, parsley, and breadcrumbs.
