Wine Profile / Tasting Notes
“In wine is truth", said the ancients…and undeniable is the quality of this wine. This is a Vermentino like no others! Left to age sur lie for 30 months and partially refined in oak. The bouquet is ample, with floral and balsamic notes and hints of honey and Mediterranean brush. On the palate this wine is massive and perfectly balanced by a generous fruity aftertaste. Very persistent with good minerality. This is an aged Vermentino, unique and strong!
Vineyard Notes
Soil type: Mostly sandy granite weathering. Training system: Espalier.
Production Notes
Very limited production: 3,300 bottles. After a soft vacuum pressing of the grapes, it is immediately cooled down and clarified through cold settling. This is followed by a very slow fermentation at controlled temperature in stainless steel tanks.
Winemaker Notes
Experts generally compare the Vino Veritas to the “Vins jaunes” of France, wines made in the Jura, a not well-known area but still extremely interesting and full of “hidden treasures”. Also comparable to orange wines made in the north-east of Italy.
Food & Wine Pairing
Pairs exceptionally well with roast beef, fish soup and shellfish. Serve at 10° C / 50° F.
