Wine Profile / Tasting Notes
Delicate sparkling wine with a pleasant scent of raspberries, blackberries, wild strawberries and roses. Thin and persistent bubbles that rise slowly; thick, almost creamy mouthfeel, but pure and dry as you would expect from a "pas-dosage". The result of reflection and patient experimentation.
Vineyard Notes
Vineyard location: Collio, Ruttars, in the municipality of Dolegna. Soil type: layers of marls and sandstones, so called "Ponca", rich in limestone and silica. Altitude: 100 mt above sea level. Training system: bilateral guyot. Density: 4,800 plants per hectare. Yield: 1.5 kg per plant.
Production Notes
Pneumatic press allows to protect the must from oxidation. The extraction is made through “soft pressing” at 0.2 atm, which may be compared to the pressure of fingers. Color, typicality and scent potentiality remain unchanged and fresh. The preservation in stainless steel tanks and the aging in bottle, supported by suitable temperatures in each phase, complete the wine quality.
Winemaker Notes
First in Friuli, we've been interpreting traditional method since 1978. In 2008 this rose was created, the only one obtained solely from the grapes grown in the area of production of Collio. Fruit of long considerations and patient experimentations. Highest challenge in sparkling wine-making technique and art. First and unique Rose Traditional Method sparkling wine in the area of production of Collio.
Food & Wine Pairing
Ideal as an aperitif. We recommend accompanying an entire meal with this wine. Excellent with pasta, salads, meat, cheese and charcuterie boards. Perfect pairing with fish dishes.
