Wine Profile / Tasting Notes
This wine is made by combining the French and the Italian clones of Sauvignon. The color shows greenish glares. On the nose, strong and aromatic scents of white peach, apricot, green peppers, sage, tomato leaf. On the palate it is delicate, yet sharp, savory and persistent keeping the expectations given by the scents.
The soil of this area is composed by mixed layers of marl and sandstone, so-called “ponca” which is rich in limestone and silica. The vineyards are 100 meters above sea level.
The fermentation is done without skin contact, at a temperature of 20°C, and no malolactic fermentation. It is aged in steel tanks and then in the bottle for 24 months on its own lees. This wine will continue to age well.
