After a first fermentation in still thanks, in February the wine ferments again in oak. In the barrels we add the skins of the dried grapes pressed to make the new Amarone

The Valpolicella Ripasso has an intense red ruby color with light red brick glares. It opens with aromas of blackberry, raisin and toasted almond. The rich approachable palate offers concentrated black cherry, red plum and a touch of cinnamon alongside hints of spices and supple tannins. Soft and velvety with an intense finish.
Vineyard Notes
Vineyard location: Hillside vineyards, located in an old quarry and the slopes around it. Altitude: 400 meters above the sea level and all facing south. Training System: Guyot and Pergola Veronese.
Production Notes
10.000 bottles produced. After a first fermentation in still thanks, in February, the wine is moved to finish the fermentation process in oak. The skins of the dried grapes pressed to make the new Amarone are then added in the barrels. The aging in barrique and tonnaux, lasts at least 24 months. After bottling the wine is left to rest in bottle for a minimum of 6 months before release.
Food & Wine Pairing
Ideal pairing with red meat, medium aged cheese and with a classic dish of the Veneto tradition: “pasta e fagioli" (pasta and beans).
Other Notes
TASI is a young, up and coming winery born in the cru of Tenuta Le Cave, Verona. They have transformed what was once a quarry, industrially exploited and abandoned, into a beautiful organic vineyard and Wine Relais overlooking the entire valley. In a local Veneto dialect TASI means ‘hush’. According to the TASI winemakers it is a “call to shut up, to everybody who takes themselves too seriously.”
